Spicy Garlic Chili Noodles by Zozifoods Ar

Tender noodles tossed in a vibrant, aromatic chili-garlic sauce with fresh green onion aromatics.

Ingredients

  • 200g (7 oz) wheat or rice noodles
  • 3 cloves garlic, minced
  • 2 tbsp chili oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 stalks green onion, finely sliced

Instructions

  1. Boil a pot of water and cook noodles according to package instructions until al dente, about 3-5 minutes.
  2. Drain the noodles, reserving 2 tablespoons of the cooking water over medium heat until heated through, about 5 min.
  3. Place the minced garlic and half of the sliced green onions in a heat-proof bowl until ready to serve.
  4. Heat the chili oil in a small pan until shimmering, then carefully pour it over the garlic and green onions to bloom the flavors.
  5. Stir in the soy sauce, oyster sauce, and sesame oil into the bowl to create the sauce base until ready to serve.
  6. Add the cooked noodles and reserved water to the bowl, tossing vigorously until the noodles are evenly coated and glossy, about 1-2 minutes.
  7. Garnish with the remaining green onions and serve immediately until ready to serve.
