Spicy Garlic Chili Noodles by Zozifoods Ar

Tender noodles tossed in a vibrant, aromatic chili-garlic sauce with fresh green onion aromatics.

Ingredients
- 200g (7 oz) wheat or rice noodles
- 3 cloves garlic, minced
- 2 tbsp chili oil
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 stalks green onion, finely sliced
Instructions
- Boil a pot of water and cook noodles according to package instructions until al dente, about 3-5 minutes.
- Drain the noodles, reserving 2 tablespoons of the cooking water over medium heat until heated through, about 5 min.
- Place the minced garlic and half of the sliced green onions in a heat-proof bowl until ready to serve.
- Heat the chili oil in a small pan until shimmering, then carefully pour it over the garlic and green onions to bloom the flavors.
- Stir in the soy sauce, oyster sauce, and sesame oil into the bowl to create the sauce base until ready to serve.
- Add the cooked noodles and reserved water to the bowl, tossing vigorously until the noodles are evenly coated and glossy, about 1-2 minutes.
- Garnish with the remaining green onions and serve immediately until ready to serve.
