Sophisticated Tarragon Chicken Salad by Zestfulkitchen
Poached chicken breast tossed in a creamy tarragon-infused dressing with crisp celery and bright lemon.

Ingredients
- 2 large chicken breasts (approx 500g)
- 1/2 cup mayonnaise
- 2 tbsp fresh tarragon, finely chopped
- 2 stalks celery, finely diced
- 1 tbsp fresh lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Poach the chicken breasts in simmering water for 15-18 minutes until the internal temperature reaches 165°F (74°C).
- Remove chicken from the pot, let it cool completely for 10 minutes, then shred or dice into bite-sized pieces.
- Whisk together mayonnaise, chopped tarragon, lemon juice, salt, and pepper in a large mixing bowl until smooth.
- Fold the cooled chicken and diced celery into the dressing until evenly coated.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
