Sophisticated Tarragon Chicken Salad by Zestfulkitchen

Poached chicken breast tossed in a creamy tarragon-infused dressing with crisp celery and bright lemon.

Ingredients

  • 2 large chicken breasts (approx 500g)
  • 1/2 cup mayonnaise
  • 2 tbsp fresh tarragon, finely chopped
  • 2 stalks celery, finely diced
  • 1 tbsp fresh lemon juice
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Poach the chicken breasts in simmering water for 15-18 minutes until the internal temperature reaches 165°F (74°C).
  2. Remove chicken from the pot, let it cool completely for 10 minutes, then shred or dice into bite-sized pieces.
  3. Whisk together mayonnaise, chopped tarragon, lemon juice, salt, and pepper in a large mixing bowl until smooth.
  4. Fold the cooled chicken and diced celery into the dressing until evenly coated.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
