Cozy, high-protein, and refined-sugar-free scones featuring soft dates and crunchy pecans.

Ingredients

  • 200 ml cottage cheese
  • 300 ml almond flour
  • 1 egg
  • 50 ml olive oil
  • 1-2 tbsp honey or 1-2 blended dates
  • 1/2 cup sliced dates
  • 1/2 cup pecans, roughly chopped
  • 1.5 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Blend the cottage cheese in a food processor or blender until completely smooth and creamy.
  3. In a large bowl, combine the blended cottage cheese, almond flour, egg, olive oil, honey (or blended dates), sliced dates, pecans, baking powder, and salt. Mix until just combined and a dough forms.
  4. Divide the dough into 4-6 equal portions and shape them into round scone shapes on the prepared baking tray.
  5. Bake for 15-17 minutes, or until the scones are golden brown and cooked through.
  6. Remove from the oven and let them cool slightly on the tray before serving warm.
