Gluten-Free Date & Pecan Scones by Zero Guilt By Hela
Cozy, high-protein, and refined-sugar-free scones featuring soft dates and crunchy pecans.

Ingredients
- 200 ml cottage cheese
- 300 ml almond flour
- 1 egg
- 50 ml olive oil
- 1-2 tbsp honey or 1-2 blended dates
- 1/2 cup sliced dates
- 1/2 cup pecans, roughly chopped
- 1.5 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
- Blend the cottage cheese in a food processor or blender until completely smooth and creamy.
- In a large bowl, combine the blended cottage cheese, almond flour, egg, olive oil, honey (or blended dates), sliced dates, pecans, baking powder, and salt. Mix until just combined and a dough forms.
- Divide the dough into 4-6 equal portions and shape them into round scone shapes on the prepared baking tray.
- Bake for 15-17 minutes, or until the scones are golden brown and cooked through.
- Remove from the oven and let them cool slightly on the tray before serving warm.
