One-Pot Spicy Gochujang Mac and Cheese by Zach

Creamy pasta infused with spicy gochujang, finished with a blend of melted cheddar and gouda cheese.

Ingredients
- 225g (8 oz) dry pasta
- 475ml (2 cup) water (or enough to cover pasta)
- 2 tbsp gochujang (korean chili paste)
- 115g (4 oz) shredded cheddar cheese
- 115g (4 oz) shredded gouda cheese
- 1/2 tsp salt (adjust to taste)
Instructions
- Combine the dry pasta, water, and gochujang in a medium pot over medium-high heat.
- Cook, stirring frequently to prevent sticking, for 8-10 minutes or until the pasta is al dente and the liquid has reduced to a thick sauce.
- Reduce heat to low and stir in the shredded cheddar and gouda cheeses until ready to serve.
- Continue stirring for 1-2 minutes until the cheese is completely melted and the sauce is smooth and glossy.
- Remove from heat and serve immediately while warm until ready to serve.
