One-Pot Spicy Gochujang Mac and Cheese by Zach

Creamy pasta infused with spicy gochujang, finished with a blend of melted cheddar and gouda cheese.

Ingredients

  • 225g (8 oz) dry pasta
  • 475ml (2 cup) water (or enough to cover pasta)
  • 2 tbsp gochujang (korean chili paste)
  • 115g (4 oz) shredded cheddar cheese
  • 115g (4 oz) shredded gouda cheese
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Combine the dry pasta, water, and gochujang in a medium pot over medium-high heat.
  2. Cook, stirring frequently to prevent sticking, for 8-10 minutes or until the pasta is al dente and the liquid has reduced to a thick sauce.
  3. Reduce heat to low and stir in the shredded cheddar and gouda cheeses until ready to serve.
  4. Continue stirring for 1-2 minutes until the cheese is completely melted and the sauce is smooth and glossy.
  5. Remove from heat and serve immediately while warm until ready to serve.
