Dense, chewy chocolate cookie bars with a deep caramelized sugar flavor and soft, fudgy center.

Ingredients

  • 44g unsalted butter, melted
  • 15g caster sugar
  • 33g light brown sugar
  • 5g dark brown sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 75g all-purpose flour
  • 15g cocoa powder
  • 1/4 tsp baking soda
  • 50g chocolate chips

Instructions

  1. Preheat your oven to 175°C (350°F) and line a small square baking pan with parchment paper.
  2. Whisk the melted butter, caster sugar, light brown sugar, and dark brown sugar in a medium bowl until smooth.
  3. Add the egg yolk and vanilla extract to the butter mixture, whisking until combined and slightly glossy.
  4. Fold in the flour, cocoa powder, and baking soda using a spatula until just combined, being careful not to overmix.
  5. Gently stir in the chocolate chips until evenly distributed throughout the dough.
  6. Spread the dough into the prepared pan, smoothing the top with a spatula until ready to serve.
  7. Bake for 20-25 minutes or until the edges are set but the center remains slightly soft.
  8. Cool completely in the pan before slicing into bars to ensure they set properly.
