Moist, rustic apple cake featuring tender fruit folded into a simple, light sponge batter.

Ingredients
- 3 large apples, peeled and diced
- 4 large eggs
- 200g (1 cup) granulated sugar
- 250g (2 cup) all-purpose flour
- 100ml (1/2 cup) vegetable oil
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat your oven to 180°C (350°F) and grease a standard loaf or cake pan.
- Whisk the eggs and sugar in a large bowl for 5 minutes until the mixture is pale and thick.
- Gradually stream in the oil and vanilla extract while continuing to whisk until fully incorporated.
- Fold in the flour and baking powder gently using a spatula until no dry streaks remain.
- Toss the diced apples with cinnamon, then fold them into the cake batter over medium heat until heated through, about 5 min.
- Pour the mixture into the prepared pan and smooth the top with a spatula until ready to serve.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
