Chec cu Mere (Romanian Apple Cake) by Yoyorelalala

Moist, rustic apple cake featuring tender fruit folded into a simple, light sponge batter.

Ingredients

  • 3 large apples, peeled and diced
  • 4 large eggs
  • 200g (1 cup) granulated sugar
  • 250g (2 cup) all-purpose flour
  • 100ml (1/2 cup) vegetable oil
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a standard loaf or cake pan.
  2. Whisk the eggs and sugar in a large bowl for 5 minutes until the mixture is pale and thick.
  3. Gradually stream in the oil and vanilla extract while continuing to whisk until fully incorporated.
  4. Fold in the flour and baking powder gently using a spatula until no dry streaks remain.
  5. Toss the diced apples with cinnamon, then fold them into the cake batter over medium heat until heated through, about 5 min.
  6. Pour the mixture into the prepared pan and smooth the top with a spatula until ready to serve.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
