Roasted sweet potatoes topped with seasoned lean beef, Italian sausage, creamy cottage cheese, and fresh avocado.

Ingredients

  • 3 large sweet potatoes
  • 2 tbsp olive oil
  • 1 lb % lean ground beef
  • 8 oz mild italian sausage
  • 3 tbsp taco seasoning blend
  • 1 bell pepper, diced
  • 0.5 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup cottage cheese
  • 1 avocado, sliced
  • 2 green onions, chopped
  • 1 tbsp butter
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp black pepper (adjust to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes thoroughly, poke holes all over with a fork, coat with olive oil, salt, and pepper.
  2. Roast sweet potatoes for 60-90 minutes until soft when pierced with a fork.
  3. Heat a large skillet over medium-high heat. Add ground beef and Italian sausage, cooking until browned and cooked through, about 8-10 minutes.
  4. Season meat with taco seasoning, stir well, and drain excess fat.
  5. Add diced bell pepper, red onion, and garlic to the skillet, sautéing for 5 minutes until softened.
  6. Remove sweet potatoes from the oven, let cool slightly, then split open, mash the insides with butter, salt, and pepper.
  7. Assemble bowls by topping mashed sweet potatoes with the beef mixture, a scoop of cottage cheese, sliced avocado, and green onions.
