Sweet Potato Taco Beef Bowls by Youknwbrandon
Roasted sweet potatoes topped with seasoned lean beef, Italian sausage, creamy cottage cheese, and fresh avocado.

Ingredients
- 3 large sweet potatoes
- 2 tbsp olive oil
- 1 lb % lean ground beef
- 8 oz mild italian sausage
- 3 tbsp taco seasoning blend
- 1 bell pepper, diced
- 0.5 red onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup cottage cheese
- 1 avocado, sliced
- 2 green onions, chopped
- 1 tbsp butter
- 1 tsp salt (adjust to taste)
- 0.5 tsp black pepper (adjust to taste)
Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes thoroughly, poke holes all over with a fork, coat with olive oil, salt, and pepper.
- Roast sweet potatoes for 60-90 minutes until soft when pierced with a fork.
- Heat a large skillet over medium-high heat. Add ground beef and Italian sausage, cooking until browned and cooked through, about 8-10 minutes.
- Season meat with taco seasoning, stir well, and drain excess fat.
- Add diced bell pepper, red onion, and garlic to the skillet, sautéing for 5 minutes until softened.
- Remove sweet potatoes from the oven, let cool slightly, then split open, mash the insides with butter, salt, and pepper.
- Assemble bowls by topping mashed sweet potatoes with the beef mixture, a scoop of cottage cheese, sliced avocado, and green onions.
