Tender, marbled vanilla and chocolate loaf cake finished with a sweet, buttery chocolate chip crumble.

Ingredients

  • 115g (1/2 cup) unsalted butter, melted and browned (for crumble)
  • 100g (1/2 cup) white sugar (for crumble)
  • 100g (1/2 cup) dark brown sugar (for crumble)
  • 150g (1 1/4 cup) all-purpose flour (for crumble)
  • 100g (1/2 cup) chocolate chips (for crumble)
  • 1 tsp vanilla extract (for crumble)
  • 225g (1 cup) unsalted butter, softened (for cake)
  • 200g (1 cup) sugar (for cake)
  • 120g (1/2 cup) greek yogurt (for cake)
  • 120ml (1/2 cup) buttermilk (for cake)
  • 300g (2 1/2 cup) all-purpose flour (for cake)
  • 2 tsp baking powder (for cake)
  • 1/2 tsp salt (for cake)
  • 3 tbsp cocoa powder (for chocolate batter)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a standard loaf pan.
  2. Make the crumble by melting butter until golden brown, then mix with white sugar, brown sugar, flour, chocolate chips, and vanilla extract until clumpy; set aside.
  3. Prepare the cake batter by creaming butter and sugar until fluffy, then mix in Greek yogurt, buttermilk, and dry ingredients (flour, baking powder, salt) until just combined.
  4. Divide the cake batter in half; fold cocoa powder into one half to create the chocolate batter.
  5. Alternate scoops of vanilla and chocolate batter into the loaf pan, swirling lightly with a knife to create a marble effect.
  6. Top with the prepared crumble mixture.
  7. Bake for 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
