Marble Coffee Loaf Cake by Youknwbrandon
Tender, marbled vanilla and chocolate loaf cake finished with a sweet, buttery chocolate chip crumble.

Ingredients
- 115g (1/2 cup) unsalted butter, melted and browned (for crumble)
- 100g (1/2 cup) white sugar (for crumble)
- 100g (1/2 cup) dark brown sugar (for crumble)
- 150g (1 1/4 cup) all-purpose flour (for crumble)
- 100g (1/2 cup) chocolate chips (for crumble)
- 1 tsp vanilla extract (for crumble)
- 225g (1 cup) unsalted butter, softened (for cake)
- 200g (1 cup) sugar (for cake)
- 120g (1/2 cup) greek yogurt (for cake)
- 120ml (1/2 cup) buttermilk (for cake)
- 300g (2 1/2 cup) all-purpose flour (for cake)
- 2 tsp baking powder (for cake)
- 1/2 tsp salt (for cake)
- 3 tbsp cocoa powder (for chocolate batter)
Instructions
- Preheat oven to 175°C (350°F) and grease a standard loaf pan.
- Make the crumble by melting butter until golden brown, then mix with white sugar, brown sugar, flour, chocolate chips, and vanilla extract until clumpy; set aside.
- Prepare the cake batter by creaming butter and sugar until fluffy, then mix in Greek yogurt, buttermilk, and dry ingredients (flour, baking powder, salt) until just combined.
- Divide the cake batter in half; fold cocoa powder into one half to create the chocolate batter.
- Alternate scoops of vanilla and chocolate batter into the loaf pan, swirling lightly with a knife to create a marble effect.
- Top with the prepared crumble mixture.
- Bake for 65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
