Vibrant, refreshing bean and vegetable salad tossed in a smoky, sweet chipotle vinaigrette.

Ingredients

  • 1/2 cucumber, diced
  • 2 bell peppers (1 red, 1 yellow), diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, finely diced
  • 1 large jalapeño, seeded and minced
  • 425g (15 oz) black beans, rinsed and drained
  • 425g (15 oz) black-eyed peas, rinsed and drained
  • 425g (15 oz) corn kernels, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp red wine vinegar
  • 2 tbsp honey
  • 1 chipotle pepper in adobo, minced
  • 1 tbsp fresh lime juice
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. Combine the diced cucumber, bell peppers, tomatoes, red onion, jalapeño, black beans, black-eyed peas, and corn in a large mixing bowl.
  2. Whisk together the olive oil, apple cider vinegar, red wine vinegar, honey, minced chipotle pepper, lime juice, oregano, garlic powder, smoked paprika, salt, and pepper in a small bowl until fully emulsified.
  3. Pour the dressing over the vegetable and bean mixture.
  4. Fold in the fresh cilantro and green onions, tossing gently until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
