Vibrant, refreshing bean and vegetable salad tossed in a smoky, sweet chipotle vinaigrette.

Ingredients
- 1/2 cucumber, diced
- 2 bell peppers (1 red, 1 yellow), diced
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, finely diced
- 1 large jalapeño, seeded and minced
- 425g (15 oz) black beans, rinsed and drained
- 425g (15 oz) black-eyed peas, rinsed and drained
- 425g (15 oz) corn kernels, drained
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/4 cup olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp red wine vinegar
- 2 tbsp honey
- 1 chipotle pepper in adobo, minced
- 1 tbsp fresh lime juice
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
Instructions
- Combine the diced cucumber, bell peppers, tomatoes, red onion, jalapeño, black beans, black-eyed peas, and corn in a large mixing bowl.
- Whisk together the olive oil, apple cider vinegar, red wine vinegar, honey, minced chipotle pepper, lime juice, oregano, garlic powder, smoked paprika, salt, and pepper in a small bowl until fully emulsified.
- Pour the dressing over the vegetable and bean mixture.
- Fold in the fresh cilantro and green onions, tossing gently until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
