Waterless Boiled Pork (Suyuk) by Yooinoz

Tender, lightly boiled pork belly served without a traditional simmering liquid for a cleaner flavor.

Ingredients

  • 1.5 lb pork belly, skin on
  • 1 onion, halved
  • 2 garlic cloves, smashed
  • 1 thumb-sized piece of ginger, sliced
  • 2 green onions, cut into large pieces
  • 1 cup water
  • 1 tbsp soy sauce
  • 1 tbsp doenjang (fermented soybean paste)
  • 1 tsp black peppercorns

Instructions

  1. Place pork belly, onion halves, smashed garlic, sliced ginger, green onion pieces, water, soy sauce, doenjang, and black peppercorns into a pot until ready to serve.
  2. Cover the pot and cook over medium-high heat for 10 minutes until the water boils.
  3. Reduce heat to medium-low, cover, and simmer for 30-35 minutes, or until the pork is tender and cooked through.
  4. Remove the pork belly from the pot and let it rest for 5 minutes.
  5. Slice the rested pork belly into bite-sized pieces and serve until ready to serve.
