Classic Almond Croissants by Yaydadcooking
Buttery, day-old croissants filled and topped with a rich, aromatic almond cream and baked until golden.

Ingredients
- 4 day-old croissants
- 115 g butter, room temperature
- 115 g sugar
- 115 g almond flour
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
- Cream together the room temperature butter and sugar in a medium bowl until smooth and pale, about 2-3 minutes.
- Add the egg, vanilla extract, almond extract, and salt to the butter mixture, whisking until fully incorporated.
- Fold in the almond flour until a thick, uniform paste forms.
- Slice the croissants in half horizontally, leaving them slightly attached at the spine.
- Spread a generous tablespoon of almond cream inside each croissant and close them.
- Spread a thin layer of the remaining almond cream over the tops of the croissants.
- Bake for 12-15 minutes, or until the almond cream topping is golden brown and set.
- Cool on a wire rack for 5 minutes before serving.
