Buttery, day-old croissants filled and topped with a rich, aromatic almond cream and baked until golden.

Ingredients

  • 4 day-old croissants
  • 115 g butter, room temperature
  • 115 g sugar
  • 115 g almond flour
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. Cream together the room temperature butter and sugar in a medium bowl until smooth and pale, about 2-3 minutes.
  3. Add the egg, vanilla extract, almond extract, and salt to the butter mixture, whisking until fully incorporated.
  4. Fold in the almond flour until a thick, uniform paste forms.
  5. Slice the croissants in half horizontally, leaving them slightly attached at the spine.
  6. Spread a generous tablespoon of almond cream inside each croissant and close them.
  7. Spread a thin layer of the remaining almond cream over the tops of the croissants.
  8. Bake for 12-15 minutes, or until the almond cream topping is golden brown and set.
  9. Cool on a wire rack for 5 minutes before serving.
