Ingredients
- 4 chicken thighs or breasts, boneless and skinless
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup light cream or half-and-half
- 1/4 cup parmesan cheese, grated
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 tsp dried oregano
Instructions
- Season the chicken thighs or breasts evenly on both sides with garlic powder, salt, and black pepper until ready to serve.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through; remove from the pan and set aside.
- Lower the heat to medium, add minced garlic to the same pan, and sauté for 1 minute until fragrant.
- Pour in the chicken broth and deglaze the pan, scraping up any browned bits from the bottom.
- Stir in the sun-dried tomatoes, dried oregano, and light cream; simmer for 3-4 minutes until the sauce begins to thicken.
- Whisk in the parmesan cheese until melted and smooth, then return the chicken to the pan to coat in the sauce for 1-2 minutes before serving.
