Ingredients

  • 4 chicken thighs or breasts, boneless and skinless
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup light cream or half-and-half
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 tsp dried oregano

Instructions

  1. Season the chicken thighs or breasts evenly on both sides with garlic powder, salt, and black pepper until ready to serve.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through; remove from the pan and set aside.
  3. Lower the heat to medium, add minced garlic to the same pan, and sauté for 1 minute until fragrant.
  4. Pour in the chicken broth and deglaze the pan, scraping up any browned bits from the bottom.
  5. Stir in the sun-dried tomatoes, dried oregano, and light cream; simmer for 3-4 minutes until the sauce begins to thicken.
  6. Whisk in the parmesan cheese until melted and smooth, then return the chicken to the pan to coat in the sauce for 1-2 minutes before serving.
