Rich, molten chocolate cake with a self-saucing fudge center, served warm with a dusting of sugar.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsweetened cocoa powder (for the topping)
  • 1 1/4 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish.
  2. Whisk together the flour, granulated sugar, 1/4 cup cocoa powder, baking powder, and salt in a large bowl
  3. Stir in the milk, melted butter, and vanilla extract until just combined, then spread the batter evenly into the prepared baking dish.
  4. Whisk together the brown sugar and the remaining 1/4 cup of cocoa powder in a small bowl, then sprinkle this mixture evenly over the top of the batter
  5. Pour the boiling water carefully over the entire top of the dish; do not stir
  6. Bake for 35 to 40 minutes, or until the edges are set and the center is bubbling, then let cool for 10 minutes before serving.
