Quick Bangladeshi-style pani puri filling with chickpeas, potato, onion, herbs, and spices.

Ingredients

  • 1 cup chickpeas, drained and rinsed
  • 1 medium potato, boiled and peeled
  • 1/2 medium onion, finely diced
  • 1/2 cup fresh coriander, chopped
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper powder
  • 1 tsp chaat masala
  • 12-16 ready-made pani puri shells
  • 1 cup ready-made tamarind water

Instructions

  1. Boil the drained chickpeas for 5-10 minutes until warmed through, then drain well.
  2. Dice the onion and chop the coriander finely.
  3. Add the boiled potato to a bowl and mash it lightly with a fork.
  4. Mix in the chickpeas, onion, coriander, salt, cumin powder, coriander powder, chilli powder, black pepper powder, and chaat masala until evenly combined.
  5. Spoon the filling into the ready-made pani puri shells, filling each one about halfway.
  6. Pour in the ready-made tamarind water just before serving so the shells stay crisp.
