Crunchy homemade seed crackers that swap processed bread for a protein-packed snack.

Ingredients

  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed meal
  • 1/2 tsp fine salt
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or mixed herbs
  • 1 cup water
  • 1 tbsp olive oil

Instructions

  1. Heat the oven to 325°F and line a baking sheet with parchment paper.
  2. Mix sunflower seeds, pumpkin seeds, sesame seeds, chia seeds, flaxseed meal, salt, garlic powder, and herbs in a bowl.
  3. Stir in water and olive oil, then let the mixture sit for 10 minutes until thick and spreadable.
  4. Spread the mixture very thinly and evenly on the prepared baking sheet, about 1/8 inch thick.
  5. Score into cracker shapes with a knife or pizza cutter after 5 minutes of baking, when the top starts to set.
  6. Bake for 25-30 minutes until dry and deeply golden at the edges.
  7. Cool completely on the pan for 15 minutes, then break along the scored lines.
