Soft-Baked Almond Butter Protein Scones by Welleasy

Soft-baked almond butter protein scones with oat flour and dark chocolate chips.

Ingredients
- 1/2 cup unsweetened applesauce
- 1/4 cup smooth almond butter
- 1 large egg
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups oat flour
- 1/4 cup almond flour
- 2 tbsp neutral or vanilla protein powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 pinch sea salt
- 1/3 cup dark chocolate chips
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper, about 5 minutes.
- Mix the applesauce, almond butter, egg, maple syrup, and vanilla in a bowl until smooth, about 1 minute.
- Add the oat flour, almond flour, protein powder, baking powder, baking soda, and salt, then stir just until combined, about 30 seconds.
- Fold in the dark chocolate chips until evenly distributed, being careful not to overmix.
- Form the dough into 5 thick scone-like mounds or cookie balls on the tray; dust your hands with flour if the dough feels sticky.
- Bake for 15 minutes, until the tops are set and the edges are lightly golden.
- Cool on the tray for 5 minutes before serving so the centers stay soft and gooey.
