Soft-Baked Almond Butter Protein Scones by Welleasy

Soft-baked almond butter protein scones with oat flour and dark chocolate chips.

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup smooth almond butter
  • 1 large egg
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1/4 cup almond flour
  • 2 tbsp neutral or vanilla protein powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 pinch sea salt
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper, about 5 minutes.
  2. Mix the applesauce, almond butter, egg, maple syrup, and vanilla in a bowl until smooth, about 1 minute.
  3. Add the oat flour, almond flour, protein powder, baking powder, baking soda, and salt, then stir just until combined, about 30 seconds.
  4. Fold in the dark chocolate chips until evenly distributed, being careful not to overmix.
  5. Form the dough into 5 thick scone-like mounds or cookie balls on the tray; dust your hands with flour if the dough feels sticky.
  6. Bake for 15 minutes, until the tops are set and the edges are lightly golden.
  7. Cool on the tray for 5 minutes before serving so the centers stay soft and gooey.
