Snickers Magic Shell Chia Pudding by Welleasy

Creamy, chocolatey chia pudding layered with peanut butter mousse, dates, and a magic shell topping.

Ingredients

  • 1/4 cup Greek yogurt or vegan alternative
  • 2 tbsp chia seeds
  • 1 tsp maple syrup
  • 2 tbsp peanut butter
  • 1 splash milk of choice, about 1 to 2 tbsp
  • 1 pinch salt
  • 2 Medjool dates, soaked in hot water for 10 minutes and mashed
  • 2 tbsp melted chocolate
  • 1 tbsp chopped peanuts
  • 1 pinch sea salt

Instructions

  1. Mix the Greek yogurt, chia seeds, maple syrup, peanut butter, milk, and salt in a container until evenly combined, then let it sit for about 30 minutes until thickened.
  2. Stir the second portion of Greek yogurt with the peanut butter until smooth and creamy.
  3. Spoon the peanut butter mousse over the set chia pudding in an even layer.
  4. Top with the mashed dates, spreading them gently over the mousse.
  5. Drizzle the melted chocolate over the top, then finish with chopped peanuts and a pinch of sea salt.
  6. Chill the assembled pudding in the fridge for 10 to 15 minutes, or until the chocolate sets and the layers are firm.
