Single-Serve Brownie Bite by Welleasy

Gluten-free, dairy-free brownie bite made with dark chocolate, almond flour, and coconut sugar.

Ingredients
- 20 g dark chocolate drops, plus 1 tbsp extra for sprinkling
- 2 tbsp extra virgin olive oil
- 1 egg yolk
- 22 g coconut sugar
- 15 g almond flour
- 1 tbsp cacao powder
- 1 tbsp collagen powder
- 1 pinch salt
Instructions
- Preheat the oven to 180°C and lightly grease or line two small oven-safe glass pots or muffin molds.
- Melt the dark chocolate drops, then stir in the extra virgin olive oil and let the mixture cool for 2 minutes.
- In a small bowl, whisk the egg yolk and coconut sugar until combined and slightly glossy, about 1 minute.
- Add the cacao powder, almond flour, collagen powder, and salt, then mix until evenly combined.
- Pour the chocolate mixture into the dry mixture and stir thoroughly until you have a thick brownie batter, about 30 seconds.
- Divide the batter between the prepared molds and smooth the tops.
- Bake for 13 minutes, until the edges are set and the center looks just slightly soft.
- Sprinkle with the extra chocolate drops while warm, then cool for 5 minutes before eating.
