Single-Serve Brownie Bite by Welleasy

Gluten-free, dairy-free brownie bite made with dark chocolate, almond flour, and coconut sugar.

Ingredients

  • 20 g dark chocolate drops, plus 1 tbsp extra for sprinkling
  • 2 tbsp extra virgin olive oil
  • 1 egg yolk
  • 22 g coconut sugar
  • 15 g almond flour
  • 1 tbsp cacao powder
  • 1 tbsp collagen powder
  • 1 pinch salt

Instructions

  1. Preheat the oven to 180°C and lightly grease or line two small oven-safe glass pots or muffin molds.
  2. Melt the dark chocolate drops, then stir in the extra virgin olive oil and let the mixture cool for 2 minutes.
  3. In a small bowl, whisk the egg yolk and coconut sugar until combined and slightly glossy, about 1 minute.
  4. Add the cacao powder, almond flour, collagen powder, and salt, then mix until evenly combined.
  5. Pour the chocolate mixture into the dry mixture and stir thoroughly until you have a thick brownie batter, about 30 seconds.
  6. Divide the batter between the prepared molds and smooth the tops.
  7. Bake for 13 minutes, until the edges are set and the center looks just slightly soft.
  8. Sprinkle with the extra chocolate drops while warm, then cool for 5 minutes before eating.
