Salted Matcha Macadamia Popcorn Clusters by Welleasy

Crunchy popcorn clusters coated in matcha white chocolate with macadamias and flaky salt.

Ingredients

  • 1 bag popcorn, popped (about 8 cups)
  • 1 heaped cup sugar-free white chocolate chips or chopped white chocolate
  • 1 heaped tsp matcha powder
  • 1/2 cup macadamia nuts, chopped (optional)
  • 1/2 tsp flaky sea salt, plus more to taste
  • 1 tsp neutral oil or coconut oil, if needed for melting

Instructions

  1. Line a baking tray with parchment paper and spread the popped popcorn in an even layer, then scatter the chopped macadamias over top.
  2. Melt the white chocolate gently in a microwave or double boiler over low heat, stirring until smooth, about 1 to 2 minutes.
  3. Whisk the matcha powder into the melted chocolate until fully combined and vibrant green, adding 1 teaspoon oil only if the mixture seems too thick.
  4. Drizzle the matcha chocolate evenly over the popcorn, then sprinkle with flaky sea salt right away.
  5. Let the tray sit at room temperature until the chocolate sets, about 20 to 30 minutes, then break into clusters and serve.
