Refined Sugar-Free Choc Chunk Cookies by Welleasy

Crispy-edged, soft-centered chocolate chunk cookies sweetened with maple syrup and finished with sea salt.

Ingredients
- 1 1/2 cups Doves Farm flour
- 1/2 cup melted butter or coconut oil
- 1/2 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 2/3 cup chopped pecans
- 1 bar Hu Hazelnut Chocolate, chopped into chunks
- Maldon Celtic sea salt, for finishing
Instructions
- Whisk the melted butter or coconut oil with the maple syrup in a bowl until smooth, about 30 seconds.
- Add the egg and vanilla extract, then mix until fully combined, about 20 seconds.
- Fold in the flour and baking soda until just incorporated, then stir in the pecans and chocolate chunks.
- Chill the dough for 30 to 60 minutes, until firm enough to scoop.
- Roll the dough into 12 balls, place on a lined baking tray, and flatten each slightly.
- Bake at 170°C for 10 to 12 minutes, until the edges are golden and the centers still look soft.
- Cool on the tray for 10 minutes, then transfer to a rack and finish with a light sprinkle of sea salt.
