Refined Sugar-Free Choc Chunk Cookies by Welleasy

Crispy-edged, soft-centered chocolate chunk cookies sweetened with maple syrup and finished with sea salt.

Ingredients

  • 1 1/2 cups Doves Farm flour
  • 1/2 cup melted butter or coconut oil
  • 1/2 cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 2/3 cup chopped pecans
  • 1 bar Hu Hazelnut Chocolate, chopped into chunks
  • Maldon Celtic sea salt, for finishing

Instructions

  1. Whisk the melted butter or coconut oil with the maple syrup in a bowl until smooth, about 30 seconds.
  2. Add the egg and vanilla extract, then mix until fully combined, about 20 seconds.
  3. Fold in the flour and baking soda until just incorporated, then stir in the pecans and chocolate chunks.
  4. Chill the dough for 30 to 60 minutes, until firm enough to scoop.
  5. Roll the dough into 12 balls, place on a lined baking tray, and flatten each slightly.
  6. Bake at 170°C for 10 to 12 minutes, until the edges are golden and the centers still look soft.
  7. Cool on the tray for 10 minutes, then transfer to a rack and finish with a light sprinkle of sea salt.
