Peanut Butter Choc Chip Blondies by Welleasy

Fudgy chickpea blondies with peanut butter and chocolate chips for a naturally sweet treat.

Ingredients

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1/2 cup creamy peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp fine salt
  • 1/2 cup oat flour
  • 1/2 cup chocolate chips, plus 2 tbsp for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  2. Blend the chickpeas, peanut butter, maple syrup, coconut oil, eggs, and vanilla until completely smooth, about 1 minute.
  3. Add the baking powder, salt, and oat flour, then blend or stir just until combined and thick.
  4. Fold in the chocolate chips, then spread the batter evenly into the prepared pan and sprinkle the top with the extra chips.
  5. Bake for 22-28 minutes, until the edges are set and the center looks just barely firm.
  6. Cool in the pan for at least 20 minutes before slicing so the blondies hold together.
