Peanut Butter Choc Chip Blondies by Welleasy

Fudgy chickpea blondies with peanut butter and chocolate chips for a naturally sweet treat.

Ingredients
- 1 can (15 oz / 425 g) chickpeas, drained and rinsed
- 1/2 cup creamy peanut butter
- 1/3 cup maple syrup
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp fine salt
- 1/2 cup oat flour
- 1/2 cup chocolate chips, plus 2 tbsp for topping
Instructions
- Preheat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
- Blend the chickpeas, peanut butter, maple syrup, coconut oil, eggs, and vanilla until completely smooth, about 1 minute.
- Add the baking powder, salt, and oat flour, then blend or stir just until combined and thick.
- Fold in the chocolate chips, then spread the batter evenly into the prepared pan and sprinkle the top with the extra chips.
- Bake for 22-28 minutes, until the edges are set and the center looks just barely firm.
- Cool in the pan for at least 20 minutes before slicing so the blondies hold together.
