No-Bake Cacao Almond Bars by Welleasy

Nourishing no-bake energy bars made with oats, nuts, seeds, almond butter, and dark chocolate.

Ingredients

  • 2 cups porridge oats, or roughly blended jumbo oats
  • 1 tsp cacao powder
  • 1 tsp Ceylon cinnamon
  • 30 g walnuts, roughly chopped
  • 30 g almonds, roughly chopped
  • 3 tbsp chia seeds
  • 25 g dark chocolate drops
  • 60 ml date syrup or maple syrup
  • 125 g almond butter
  • 2 tbsp coconut oil, melted
  • 2 tbsp dark chocolate, melted, for drizzling

Instructions

  1. Mix the oats, cacao powder, cinnamon, walnuts, almonds, chia seeds, and chocolate drops in a large bowl until evenly combined.
  2. Add the date syrup, almond butter, and melted coconut oil, then stir for 1-2 minutes until the mixture looks sticky and holds together.
  3. Press the mixture firmly into a lined square mould, smoothing the top with the back of a spoon.
  4. Refrigerate for at least 3 hours, or overnight for the firmest set, until the slab feels solid.
  5. Slice into bars and drizzle with the melted dark chocolate just before serving.
