Matcha Pistachio No-Bake Tiramisu by Welleasy

Ingredients

  • 1 tub (approx. 250g) mascarpone cheese
  • 5 tbsp maple syrup, divided
  • 1 tsp vanilla extract
  • 3.5 tsp matcha powder, divided
  • 3 tbsp pistachio butter
  • 125ml double cream (heavy cream)
  • 2 tsp almond essence
  • ¾ cup water
  • 1 pack (approx. 100-150g) ladyfinger biscuits
  • ⅓ cup pistachios, finely chopped

Instructions

  1. In a large bowl, combine the mascarpone cheese, 2 tbsp maple syrup, vanilla extract, 1.5 tsp matcha powder, pistachio butter, and double cream. Gently whisk until just combined; be careful not to over-whisk.
  2. In a separate bowl, whisk together the remaining 3 tbsp maple syrup, 2 tsp matcha powder, almond essence, and ¾ cup water until the matcha powder is fully dissolved.
  3. Quickly dip each ladyfinger into the matcha soak mixture, ensuring they are coated but not oversaturated.
  4. Arrange a single layer of dipped ladyfingers in the bottom of your serving dish or individual glasses.
  5. Spoon half of the pistachio cream mixture over the ladyfinger layer and spread evenly.
  6. Create a second layer of dipped ladyfingers on top of the cream.
  7. Spread the remaining pistachio cream over the second ladyfinger layer.
  8. Sprinkle the finely chopped pistachios evenly over the top layer of cream.
  9. Cover the dessert and chill in the refrigerator for at least 3-4 hours, or until set.
