Matcha Pistachio No-Bake Tiramisu by Welleasy

Ingredients
- 1 tub (approx. 250g) mascarpone cheese
- 5 tbsp maple syrup, divided
- 1 tsp vanilla extract
- 3.5 tsp matcha powder, divided
- 3 tbsp pistachio butter
- 125ml double cream (heavy cream)
- 2 tsp almond essence
- ¾ cup water
- 1 pack (approx. 100-150g) ladyfinger biscuits
- ⅓ cup pistachios, finely chopped
Instructions
- In a large bowl, combine the mascarpone cheese, 2 tbsp maple syrup, vanilla extract, 1.5 tsp matcha powder, pistachio butter, and double cream. Gently whisk until just combined; be careful not to over-whisk.
- In a separate bowl, whisk together the remaining 3 tbsp maple syrup, 2 tsp matcha powder, almond essence, and ¾ cup water until the matcha powder is fully dissolved.
- Quickly dip each ladyfinger into the matcha soak mixture, ensuring they are coated but not oversaturated.
- Arrange a single layer of dipped ladyfingers in the bottom of your serving dish or individual glasses.
- Spoon half of the pistachio cream mixture over the ladyfinger layer and spread evenly.
- Create a second layer of dipped ladyfingers on top of the cream.
- Spread the remaining pistachio cream over the second ladyfinger layer.
- Sprinkle the finely chopped pistachios evenly over the top layer of cream.
- Cover the dessert and chill in the refrigerator for at least 3-4 hours, or until set.
