Longevity Chocolate Mousse by Welleasy

Rich, silky chocolate mousse finished with olive oil and flaky sea salt.

Ingredients

  • 400 g salted dark chocolate, finely chopped
  • 800 ml double cream, divided
  • 6 large eggs, separated
  • 1/3 cup coconut sugar
  • Flaky sea salt, to serve
  • Extra virgin olive oil, to serve

Instructions

  1. Add the egg yolks and 400 ml of the cream to a saucepan and whisk over low heat for 3 to 5 minutes, until steaming but not boiling.
  2. Pour the warm cream mixture over the chopped chocolate and stir for 1 to 2 minutes until smooth, glossy, and fully melted.
  3. Whisk the remaining 400 ml cream to soft peaks, 2 to 4 minutes.
  4. Whisk the egg whites with the coconut sugar until stiff peaks form, about 3 to 5 minutes.
  5. Gently fold the whipped cream and egg whites into the chocolate mixture until just combined and no white streaks remain.
  6. Spoon into a large serving dish or individual pots and chill for at least 3 hours, until set.
  7. Drizzle with extra virgin olive oil and finish with flaky sea salt just before serving.
