High-Protein Almond Croissant Baked Oats by Welleasy

Soft, fluffy baked oats topped with creamy almond butter and crunchy flaked almonds, inspired by almond croissants.

Ingredients
- 2 cups oats
- 1/4 cup almond flour (for oat base)
- 1/4 cup hemp seeds
- 2/3 cup vanilla or plain protein powder
- 1/2 tsp baking powder
- 1 tsp almond extract (for oat base)
- 1 banana, mashed
- 1 1/4 cups almond milk
- 1/3 cup almond butter
- 2 tbsp honey or maple syrup
- 1 egg
- 1/4 cup almond flour (for topping)
- 1 tsp almond extract (for topping)
- 1/4 cup flaked almonds
- Pinch salt
Instructions
- Preheat your oven to 180°C (350°F).
- In a 6x6 inch baking dish, combine all ingredients for the oat base: oats, almond flour, hemp seeds, protein powder, baking powder, almond extract, salt, mashed banana, and almond milk. Stir everything together until well combined and no dry pockets remain.
- In a separate bowl, whisk together the almond topping ingredients: almond butter, honey or maple syrup, egg, almond flour, and almond extract, until smooth.
- Evenly spoon the almond topping over the oat base in the baking dish.
- Sprinkle the flaked almonds over the almond topping.
- Bake for 30-35 minutes, or until the top is golden brown and the oats are set.
- Let the baked oats cool slightly before slicing into 4 portions. Reheat to serve, if desired, and top with Greek yogurt.
