High-Protein Almond Croissant Baked Oats by Welleasy

Soft, fluffy baked oats topped with creamy almond butter and crunchy flaked almonds, inspired by almond croissants.

Ingredients

  • 2 cups oats
  • 1/4 cup almond flour (for oat base)
  • 1/4 cup hemp seeds
  • 2/3 cup vanilla or plain protein powder
  • 1/2 tsp baking powder
  • 1 tsp almond extract (for oat base)
  • 1 banana, mashed
  • 1 1/4 cups almond milk
  • 1/3 cup almond butter
  • 2 tbsp honey or maple syrup
  • 1 egg
  • 1/4 cup almond flour (for topping)
  • 1 tsp almond extract (for topping)
  • 1/4 cup flaked almonds
  • Pinch salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a 6x6 inch baking dish, combine all ingredients for the oat base: oats, almond flour, hemp seeds, protein powder, baking powder, almond extract, salt, mashed banana, and almond milk. Stir everything together until well combined and no dry pockets remain.
  3. In a separate bowl, whisk together the almond topping ingredients: almond butter, honey or maple syrup, egg, almond flour, and almond extract, until smooth.
  4. Evenly spoon the almond topping over the oat base in the baking dish.
  5. Sprinkle the flaked almonds over the almond topping.
  6. Bake for 30-35 minutes, or until the top is golden brown and the oats are set.
  7. Let the baked oats cool slightly before slicing into 4 portions. Reheat to serve, if desired, and top with Greek yogurt.
