Healthy Sweet And Sour Chicken by Welleasy

Lighter fakeaway sweet and sour chicken with a simple homemade sauce and fresh sides.

Ingredients
- 60 ml ketchup
- 60 ml honey
- 60 ml apple cider vinegar
- 2 tsp tamari sauce
- 1 tsp garlic granules
- 1/2 tsp ginger powder
- 1 small yellow onion, diced
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 2 chicken breasts, diced
- 1 tbsp olive oil
- 2 cups cooked rice, to serve
- 1/2 cucumber, sliced, to serve
- 1 medium carrot, cut into ribbons, to serve
- 1 tsp sesame seeds, to serve
Instructions
- Mix the ketchup, honey, and apple cider vinegar in a small bowl until smooth; set aside.
- Heat the olive oil in a large pan over medium-high heat for 1 minute.
- Add the diced onion, red pepper, green pepper, and chicken, then cook for 5 minutes, stirring often, until the chicken is mostly opaque.
- Stir in the tamari, garlic granules, and ginger powder, then cook for 1 minute until fragrant.
- Pour in the sweet and sour sauce and simmer for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce looks glossy.
- Serve hot over rice with cucumber slices, carrot ribbons, and a sprinkle of sesame seeds.
