Healthy Sweet And Sour Chicken by Welleasy

Lighter fakeaway sweet and sour chicken with a simple homemade sauce and fresh sides.

Ingredients

  • 60 ml ketchup
  • 60 ml honey
  • 60 ml apple cider vinegar
  • 2 tsp tamari sauce
  • 1 tsp garlic granules
  • 1/2 tsp ginger powder
  • 1 small yellow onion, diced
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 2 cups cooked rice, to serve
  • 1/2 cucumber, sliced, to serve
  • 1 medium carrot, cut into ribbons, to serve
  • 1 tsp sesame seeds, to serve

Instructions

  1. Mix the ketchup, honey, and apple cider vinegar in a small bowl until smooth; set aside.
  2. Heat the olive oil in a large pan over medium-high heat for 1 minute.
  3. Add the diced onion, red pepper, green pepper, and chicken, then cook for 5 minutes, stirring often, until the chicken is mostly opaque.
  4. Stir in the tamari, garlic granules, and ginger powder, then cook for 1 minute until fragrant.
  5. Pour in the sweet and sour sauce and simmer for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce looks glossy.
  6. Serve hot over rice with cucumber slices, carrot ribbons, and a sprinkle of sesame seeds.
