Healthy Homemade Mince Pies by Welleasy

Gluten-free, naturally sweetened festive mince pies with almond pastry and fruit filling.

Ingredients
- 170 g gluten-free flour
- 170 g ground almonds
- 2 tbsp coconut sugar
- 1 pinch salt
- 100 g solid coconut oil, chilled
- 6 tbsp ice-cold water
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1/2 cup currants
- 1/3 cup chopped soft prunes
- 1 medium red apple, grated
- 1 orange, zested and juiced
- 1/4 cup brandy or water, optional
- 1 egg, beaten, for brushing (optional)
Instructions
- Combine the raisins, cranberries, currants, prunes, grated apple, orange zest, orange juice, and brandy or water in a saucepan over low heat for 20 to 25 minutes, stirring occasionally, until soft and jammy.
- Remove the filling from the heat and let it cool completely, about 20 minutes.
- Blend the gluten-free flour, ground almonds, coconut sugar, salt, and chilled coconut oil in a food processor until the mixture looks like fine crumbs.
- Add the ice-cold water a little at a time and pulse just until a dough forms, then wrap and rest the dough for 20 minutes.
- Roll out the dough on a lightly floured surface and cut out circles large enough to line a mince pie tin.
- Press the circles into the tin, fill each case with the cooled mince meat, then top with smaller pastry shapes such as circles or stars.
- Brush the tops with beaten egg if using, then bake at 160°C fan for 15 to 20 minutes until golden brown.
- Cool in the tin for 5 minutes, then transfer to a rack and serve warm.
