Healthy Homemade Mince Pies by Welleasy

Gluten-free, naturally sweetened festive mince pies with almond pastry and fruit filling.

Ingredients

  • 170 g gluten-free flour
  • 170 g ground almonds
  • 2 tbsp coconut sugar
  • 1 pinch salt
  • 100 g solid coconut oil, chilled
  • 6 tbsp ice-cold water
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup currants
  • 1/3 cup chopped soft prunes
  • 1 medium red apple, grated
  • 1 orange, zested and juiced
  • 1/4 cup brandy or water, optional
  • 1 egg, beaten, for brushing (optional)

Instructions

  1. Combine the raisins, cranberries, currants, prunes, grated apple, orange zest, orange juice, and brandy or water in a saucepan over low heat for 20 to 25 minutes, stirring occasionally, until soft and jammy.
  2. Remove the filling from the heat and let it cool completely, about 20 minutes.
  3. Blend the gluten-free flour, ground almonds, coconut sugar, salt, and chilled coconut oil in a food processor until the mixture looks like fine crumbs.
  4. Add the ice-cold water a little at a time and pulse just until a dough forms, then wrap and rest the dough for 20 minutes.
  5. Roll out the dough on a lightly floured surface and cut out circles large enough to line a mince pie tin.
  6. Press the circles into the tin, fill each case with the cooled mince meat, then top with smaller pastry shapes such as circles or stars.
  7. Brush the tops with beaten egg if using, then bake at 160°C fan for 15 to 20 minutes until golden brown.
  8. Cool in the tin for 5 minutes, then transfer to a rack and serve warm.
