Healthy Apple & Date Crumble by Welleasy

gluten-free, refined sugar-free apple and date crumble, naturally sweetened and baked until tender.

Ingredients
- 4 sweet apples, cored and diced
- 8 Medjool dates, finely chopped (for the base)
- 1 tbsp cinnamon (for the base)
- 1 tbsp arrowroot powder
- 1 lemon, juiced
- 1 tsp vanilla extract
- 1 tbsp coconut oil, melted (for the topping)
- 130g (approx. 1 1/4 cups) old-fashioned oats
- 40g (approx. 1/3 cup) almond flour
- 6 Medjool dates, softened and mashed (for the topping)
- 1/2 tsp cinnamon (for the topping)
- Pinch salt
Instructions
- Preheat oven to 170°C (340°F).
- In a bowl, combine the diced apples, 8 finely chopped Medjool dates, 1 tbsp cinnamon, arrowroot powder, lemon juice, and vanilla extract. Stir until well combined.
- Pour the apple mixture into a baking dish (approximately 8x8 inch or similar size).
- In a separate bowl, combine the melted coconut oil, old-fashioned oats, almond flour, 6 mashed Medjool dates, 1/2 tsp cinnamon, and a pinch of salt.
- Mix the topping ingredients until they form an even crumble mixture.
- Evenly spread the topping mixture over the apple base in the baking dish.
- Bake for 20-25 minutes, or until the apples are tender and the topping is lightly golden. Let cool slightly before serving.
