gluten-free, refined sugar-free apple and date crumble, naturally sweetened and baked until tender.

Ingredients

  • 4 sweet apples, cored and diced
  • 8 Medjool dates, finely chopped (for the base)
  • 1 tbsp cinnamon (for the base)
  • 1 tbsp arrowroot powder
  • 1 lemon, juiced
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil, melted (for the topping)
  • 130g (approx. 1 1/4 cups) old-fashioned oats
  • 40g (approx. 1/3 cup) almond flour
  • 6 Medjool dates, softened and mashed (for the topping)
  • 1/2 tsp cinnamon (for the topping)
  • Pinch salt

Instructions

  1. Preheat oven to 170°C (340°F).
  2. In a bowl, combine the diced apples, 8 finely chopped Medjool dates, 1 tbsp cinnamon, arrowroot powder, lemon juice, and vanilla extract. Stir until well combined.
  3. Pour the apple mixture into a baking dish (approximately 8x8 inch or similar size).
  4. In a separate bowl, combine the melted coconut oil, old-fashioned oats, almond flour, 6 mashed Medjool dates, 1/2 tsp cinnamon, and a pinch of salt.
  5. Mix the topping ingredients until they form an even crumble mixture.
  6. Evenly spread the topping mixture over the apple base in the baking dish.
  7. Bake for 20-25 minutes, or until the apples are tender and the topping is lightly golden. Let cool slightly before serving.
