Gut-Loving Beef Pho by Welleasy

Speedy beef pho with spiced broth, rice noodles, bok choy, kimchi, and fresh herbs.

Ingredients
- 500 ml beef broth
- 1 star anise
- 1/2 cinnamon stick
- 1 steak (about 200 g)
- 100 g rice noodles
- 2 heads bok choy, chopped
- 1/2 cup kimchi
- 1 tbsp chili crisp oil
- 1 fresh chili, thinly sliced
- 2 tbsp coriander leaves
- 2 green onion, sliced
- 1/2 lime, cut into wedges
Instructions
- Season the steak lightly and cook it in a hot pan for 2-4 minutes per side, or until done to your liking; rest for 5 minutes, then slice thinly.
- Warm the beef broth with the star anise and cinnamon in a small pot over medium heat for 8-10 minutes, until fragrant and steaming.
- Cook the rice noodles according to the package directions, usually 3-5 minutes, then drain and divide between 2 bowls.
- Add the bok choy to the simmering broth for the last 1-2 minutes, just until bright green and tender-crisp.
- Pour the hot broth and bok choy over the noodles, then top with sliced steak, kimchi, chilli, coriander, spring onion, chilli crisp oil, and a squeeze of lime.
