Fluffy Honey Marshmallows by Welleasy

Light, fluffy marshmallows sweetened with honey and scented with vanilla for a cozy snack.

Ingredients
- 1 cup water, divided
- 3 tbsp gelatin powder
- 1/2 cup raw honey
- 1 tbsp vanilla extract
- Pinch of salt
- 1 tbsp powdered sugar, for dusting (optional)
- 1 tbsp cornstarch, for dusting (optional)
Instructions
- Add 1/2 cup water to a mixing bowl and sprinkle the gelatin over it; let bloom for 5 minutes.
- Combine the remaining 1/2 cup water, honey, vanilla, and salt in a small pot over medium-low heat for 3 to 5 minutes, just until hot and steaming but not boiling.
- Start mixing the bloomed gelatin on low speed, then slowly stream in the hot honey mixture while beating.
- Increase to high speed and whip for 8 to 10 minutes, until the mixture turns very fluffy, thick, and pale.
- Line an 8x8-inch dish with parchment paper and lightly dust it with the powdered sugar-cornstarch mixture if using.
- Pour the marshmallow mixture into the dish, smooth the top, and chill for at least 4 hours until fully set.
- Lift out the slab, cut into cubes, and dust the pieces lightly before serving.
