Fluffy Honey Marshmallows by Welleasy

Light, fluffy marshmallows sweetened with honey and scented with vanilla for a cozy snack.

Ingredients

  • 1 cup water, divided
  • 3 tbsp gelatin powder
  • 1/2 cup raw honey
  • 1 tbsp vanilla extract
  • Pinch of salt
  • 1 tbsp powdered sugar, for dusting (optional)
  • 1 tbsp cornstarch, for dusting (optional)

Instructions

  1. Add 1/2 cup water to a mixing bowl and sprinkle the gelatin over it; let bloom for 5 minutes.
  2. Combine the remaining 1/2 cup water, honey, vanilla, and salt in a small pot over medium-low heat for 3 to 5 minutes, just until hot and steaming but not boiling.
  3. Start mixing the bloomed gelatin on low speed, then slowly stream in the hot honey mixture while beating.
  4. Increase to high speed and whip for 8 to 10 minutes, until the mixture turns very fluffy, thick, and pale.
  5. Line an 8x8-inch dish with parchment paper and lightly dust it with the powdered sugar-cornstarch mixture if using.
  6. Pour the marshmallow mixture into the dish, smooth the top, and chill for at least 4 hours until fully set.
  7. Lift out the slab, cut into cubes, and dust the pieces lightly before serving.
