Crispy Pistachio White Choc Cups by Welleasy

Crunchy cereal cups with creamy pistachio white chocolate and a salty pistachio finish.

Ingredients

  • 2 cups puffed spelt cereal
  • 1 bag white chocolate chips (about 10 oz / 280 g)
  • 3 tbsp pistachio butter
  • 2 tbsp chopped pistachios
  • 1 pinch salt

Instructions

  1. Melt the white chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth, about 1 to 2 minutes.
  2. Stir in the pistachio butter until fully combined and creamy.
  3. Fold in the puffed spelt cereal and a pinch of salt until evenly coated.
  4. Spoon the mixture into silicone moulds or cupcake liners, pressing lightly to compact.
  5. Sprinkle the chopped pistachios over the tops while the mixture is still soft.
  6. Chill in the fridge for 20 to 30 minutes, until firm and set, then unmould and serve.
