Crispy Pistachio White Choc Cups by Welleasy

Crunchy cereal cups with creamy pistachio white chocolate and a salty pistachio finish.

Ingredients
- 2 cups puffed spelt cereal
- 1 bag white chocolate chips (about 10 oz / 280 g)
- 3 tbsp pistachio butter
- 2 tbsp chopped pistachios
- 1 pinch salt
Instructions
- Melt the white chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth, about 1 to 2 minutes.
- Stir in the pistachio butter until fully combined and creamy.
- Fold in the puffed spelt cereal and a pinch of salt until evenly coated.
- Spoon the mixture into silicone moulds or cupcake liners, pressing lightly to compact.
- Sprinkle the chopped pistachios over the tops while the mixture is still soft.
- Chill in the fridge for 20 to 30 minutes, until firm and set, then unmould and serve.
