Cherry Chocolate Mousse by Welleasy

Silky chocolate mousse with cherry compote, made from tofu, dark chocolate, and cacao.

Ingredients

  • 1 block soft tofu, about 12 oz, drained
  • 1 bar dark chocolate, about 3.5 oz, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp cacao powder, plus more for dusting
  • 1 pinch sea salt
  • 1/2 cup cherry compote, for serving

Instructions

  1. Melt the dark chocolate until smooth, then let it cool for 2 to 3 minutes so it stays fluid but not hot.
  2. Blend the tofu, melted chocolate, maple syrup, vanilla, cacao powder, and sea salt for 1 to 2 minutes until completely silky and no tofu bits remain.
  3. Spoon 1 to 2 tablespoons cherry compote into the bottom of two glasses or small dishes.
  4. Divide the mousse over the compote and smooth the tops with a spoon.
  5. Chill the mousse for at least 3 hours, or overnight, until set and cold.
  6. Dust with cacao powder just before serving.
