Caramelised Apple Protein Loaf by Welleasy

Soft spiced protein loaf topped with caramelised apples and a maple-cinnamon finish.

Ingredients
- 1 medium apple, grated
- 250 g Greek yoghurt
- 3 large eggs
- 50 g butter, melted
- 120 g plain flour or gluten-free flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 pinch salt
- 2 cups protein powder, plain or vanilla
- 60 g maple syrup
- 1 tsp vanilla extract
- 1 medium apple, thinly sliced
- 1 knob butter
- 1 tsp ground cinnamon
- 1 tbsp maple syrup
Instructions
- Preheat the oven to 180°C and line a loaf tin with baking paper.
- Cook the sliced apple, butter, cinnamon, and maple syrup in a frying pan over low-medium heat for 5-7 minutes, until golden and lightly caramelised; set aside to cool.
- Whisk the grated apple, Greek yoghurt, eggs, and melted butter together in a large bowl until combined.
- Fold in the flour, cinnamon, baking powder, bicarbonate of soda, salt, protein powder, maple syrup, and vanilla just until no dry streaks remain.
- Pour the batter into the prepared loaf tin and smooth the top.
- Arrange the caramelised apple slices over the batter, then bake for 55 minutes, covering loosely with foil if the top browns too quickly.
- Cool in the tin for 15 minutes, then transfer to a rack and cool completely before slicing.
