Caramelised Apple Protein Loaf by Welleasy

Soft spiced protein loaf topped with caramelised apples and a maple-cinnamon finish.

Ingredients

  • 1 medium apple, grated
  • 250 g Greek yoghurt
  • 3 large eggs
  • 50 g butter, melted
  • 120 g plain flour or gluten-free flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 pinch salt
  • 2 cups protein powder, plain or vanilla
  • 60 g maple syrup
  • 1 tsp vanilla extract
  • 1 medium apple, thinly sliced
  • 1 knob butter
  • 1 tsp ground cinnamon
  • 1 tbsp maple syrup

Instructions

  1. Preheat the oven to 180°C and line a loaf tin with baking paper.
  2. Cook the sliced apple, butter, cinnamon, and maple syrup in a frying pan over low-medium heat for 5-7 minutes, until golden and lightly caramelised; set aside to cool.
  3. Whisk the grated apple, Greek yoghurt, eggs, and melted butter together in a large bowl until combined.
  4. Fold in the flour, cinnamon, baking powder, bicarbonate of soda, salt, protein powder, maple syrup, and vanilla just until no dry streaks remain.
  5. Pour the batter into the prepared loaf tin and smooth the top.
  6. Arrange the caramelised apple slices over the batter, then bake for 55 minutes, covering loosely with foil if the top browns too quickly.
  7. Cool in the tin for 15 minutes, then transfer to a rack and cool completely before slicing.
