Flourless Date Cake by Waytohealthkitchen
Dense, naturally sweetened date cake made with oat flour and a rich tahini drizzle.

Ingredients
- 1 1/2 cup pitted medjool dates
- 1 1/3 cup almond milk
- 1 1/4 cup rolled oats, ground into flour
- 1/4 cup coconut oil, melted
- 1/4 cup tahini
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 cup tahini (for drizzle)
- 1/4 cup maple syrup (for drizzle)
Instructions
- Pour boiling hot almond milk over the pitted dates and let them soak for 30 minutes.
- Blend the soaked date and milk mixture until smooth to create a date paste.
- Whisk the date paste, 1/4 cup tahini, and melted coconut oil in a large bowl until combined.
- Fold in the ground oat flour, baking powder, cinnamon, ginger, and nutmeg until a smooth batter forms.
- Pour the batter into a greased baking dish and bake at 350°F (175°C) for 40 minutes, or until a toothpick comes out clean.
- Let the cake cool completely in the pan before serving until ready to serve.
- Whisk together the remaining 1/4 cup tahini and maple syrup to create the drizzle, then pour over the cooled cake over medium heat until heated through, about 5 min.
