Dense, naturally sweetened date cake made with oat flour and a rich tahini drizzle.

Ingredients

  • 1 1/2 cup pitted medjool dates
  • 1 1/3 cup almond milk
  • 1 1/4 cup rolled oats, ground into flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup tahini
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 cup tahini (for drizzle)
  • 1/4 cup maple syrup (for drizzle)

Instructions

  1. Pour boiling hot almond milk over the pitted dates and let them soak for 30 minutes.
  2. Blend the soaked date and milk mixture until smooth to create a date paste.
  3. Whisk the date paste, 1/4 cup tahini, and melted coconut oil in a large bowl until combined.
  4. Fold in the ground oat flour, baking powder, cinnamon, ginger, and nutmeg until a smooth batter forms.
  5. Pour the batter into a greased baking dish and bake at 350°F (175°C) for 40 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely in the pan before serving until ready to serve.
  7. Whisk together the remaining 1/4 cup tahini and maple syrup to create the drizzle, then pour over the cooled cake over medium heat until heated through, about 5 min.
