Ribeye With Honey Chipotle Aioli by Wannabechefmatt
Pan-seared ribeye steak served with a sweet and smoky honey chipotle aioli dipping sauce.

Ingredients
- 2 (10 oz) ribeye steaks
- 1 tbsp neutral oil (for searing)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup mayonnaise
- 1 tbsp honey
- 1 tbsp chipotle peppers in adobo, minced
- 1 tsp lime juice
Instructions
- Pat the ribeye steaks completely dry with paper towels and season both sides generously with salt and pepper.
- Whisk together the mayonnaise, honey, minced chipotle peppers, and lime juice in a small bowl until smooth; set aside in the refrigerator.
- Heat a cast-iron skillet over high heat until smoking slightly, then add the oil.
- Place the steaks in the skillet and sear for 3-4 minutes per side for medium-rare, or until a dark brown crust forms and the internal temperature reaches 130°F (54°C).
- Remove the steaks from the skillet and let them rest on a cutting board for 5-8 minutes before slicing.
- Serve the sliced steak with the chilled honey chipotle aioli on the side.
