Ribeye With Honey Chipotle Aioli by Wannabechefmatt

Pan-seared ribeye steak served with a sweet and smoky honey chipotle aioli dipping sauce.

Ingredients

  • 2 (10 oz) ribeye steaks
  • 1 tbsp neutral oil (for searing)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 1 tbsp honey
  • 1 tbsp chipotle peppers in adobo, minced
  • 1 tsp lime juice

Instructions

  1. Pat the ribeye steaks completely dry with paper towels and season both sides generously with salt and pepper.
  2. Whisk together the mayonnaise, honey, minced chipotle peppers, and lime juice in a small bowl until smooth; set aside in the refrigerator.
  3. Heat a cast-iron skillet over high heat until smoking slightly, then add the oil.
  4. Place the steaks in the skillet and sear for 3-4 minutes per side for medium-rare, or until a dark brown crust forms and the internal temperature reaches 130°F (54°C).
  5. Remove the steaks from the skillet and let them rest on a cutting board for 5-8 minutes before slicing.
  6. Serve the sliced steak with the chilled honey chipotle aioli on the side.
