Buttery, crisp sugar cookies shaped like bunnies, perfect for festive holiday gatherings and gifts.

Ingredients

  • 250g (2 cup) all-purpose flour
  • 150g (3/4 cup) unsalted butter, softened
  • 100g (1/2 cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Cream the softened butter and sugar together in a large bowl until light and fluffy, about 3 minutes.
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. Stir in the flour and salt until a smooth dough forms, being careful not to overmix.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes to make it easier to roll.
  5. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  6. Roll out the dough on a lightly floured surface to 1/4 inch thickness until ready to serve.
  7. Cut the dough using a bunny-shaped cookie cutter and transfer to the prepared baking sheet until ready to serve.
  8. Bake for 10-12 minutes, or until the edges are lightly golden, then cool completely on a wire rack.
