Crispy, golden-fried chicken featuring a signature blend of herbs and spices for authentic flavor.

Ingredients
- 1 kg (2.2 lbs) chicken pieces (drumsticks and thighs)
- 2 cup all-purpose flour
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp paprika
- 1/2 cup buttermilk
- 1 l vegetable oil (for frying)
Instructions
- Marinate the chicken pieces in buttermilk for at least 30 minutes to ensure tenderness.
- Whisk the flour and all spices together in a large shallow bowl until well combined.
- Remove chicken from buttermilk, allowing excess to drip off, then dredge thoroughly in the seasoned flour mixture until ready to serve.
- Heat oil in a deep fryer or heavy pot to 175°C (350°F).
- Fry the chicken in batches for 12-15 minutes, or until the coating is deep golden brown and the internal temperature reaches 74°C (165°F).
- Drain on a wire rack for 5 minutes before serving to maintain crispiness.
