Greek Yogurt Cheesecake by Ueelicious

Incredibly easy no-bake cheesecake made with Greek yogurt and crushed biscuits.

Ingredients
- 2 cup homemade greek yogurt
- 1.5 cup biscoff or favorite biscuits, crushed
- 1/4 cup melted butter
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup heavy cream
Instructions
- In a bowl, combine the crushed biscuits and melted butter, mixing until well combined.
- Press the biscuit mixture evenly into the bottom of an 8-inch springform pan to form the crust until ready to serve.
- Chill the crust in the freezer for 10 minutes while you prepare the filling.
- In a separate bowl, whisk together the Greek yogurt, granulated sugar, and vanilla extract until smooth.
- Gently fold in the heavy cream until just combined.
- Pour the Greek yogurt filling over the chilled biscuit crust until ready to serve.
- Smooth the top with a spatula until ready to serve.
- Cover the cheesecake and refrigerate for at least 30 minutes, or until set.
- Once set, carefully remove the sides of the springform pan.
