Greek Yogurt Cheesecake by Ueelicious

Incredibly easy no-bake cheesecake made with Greek yogurt and crushed biscuits.

Ingredients

  • 2 cup homemade greek yogurt
  • 1.5 cup biscoff or favorite biscuits, crushed
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

Instructions

  1. In a bowl, combine the crushed biscuits and melted butter, mixing until well combined.
  2. Press the biscuit mixture evenly into the bottom of an 8-inch springform pan to form the crust until ready to serve.
  3. Chill the crust in the freezer for 10 minutes while you prepare the filling.
  4. In a separate bowl, whisk together the Greek yogurt, granulated sugar, and vanilla extract until smooth.
  5. Gently fold in the heavy cream until just combined.
  6. Pour the Greek yogurt filling over the chilled biscuit crust until ready to serve.
  7. Smooth the top with a spatula until ready to serve.
  8. Cover the cheesecake and refrigerate for at least 30 minutes, or until set.
  9. Once set, carefully remove the sides of the springform pan.
