Ingredients

  • 60g (2 oz) fresh basil leaves, packed
  • 60g (2 oz) pine nuts, toasted
  • 60g (2 oz) parmesan cheese, grated
  • 3 cloves garlic, peeled
  • 1 whole lemon, zested
  • 1/2 whole lemon, juiced
  • 1/2 tsp sea salt (adjust to taste)
  • 100ml (1/2 cup) extra virgin olive oil

Instructions

  1. Toast the pine nuts in a dry pan over medium heat for 3-5 minutes until golden and fragrant, then set aside to cool.
  2. Place the basil leaves, toasted pine nuts, parmesan, garlic, lemon zest, and lemon juice into a food processor.
  3. Pulse the mixture briefly to break down the solid ingredients.
  4. Drizzle in the olive oil while the processor is running until the pesto reaches your desired consistency, about 1-2 minutes.
  5. Season with salt to taste and pulse once more to incorporate.
