Savory-sweet tomato jam with shallots, garlic, warm spices, and sesame seeds.

Ingredients

  • 2 tbsp olive oil
  • 2 medium shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/4 cup red wine or red wine vinegar
  • 2 (28-oz) cans whole peeled tomatoes, crushed by hand
  • 1/3 cup granulated sugar
  • 1 1/2 tsp kosher salt
  • 1 tsp sesame seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Heat the olive oil in a medium pot over medium heat for 2 minutes until shimmering.
  2. Add the shallots and garlic and cook for 8-10 minutes, stirring often, until soft, golden, and jammy.
  3. Stir in the tomato paste, cinnamon, black pepper, and red pepper flakes and cook for 1 minute until fragrant.
  4. Pour in the red wine or vinegar and scrape up any browned bits, simmering for 1-2 minutes until mostly reduced.
  5. Add the crushed tomatoes, sugar, salt, and sesame seeds, then stir to combine.
  6. Simmer uncovered over medium-low heat for 20-25 minutes, stirring occasionally, until thick, glossy, and jam-like.
  7. Remove from the heat and cool for 10 minutes before serving or storing; it should mound on a spoon.
