Savory Tomato Jam by Toastedtable
Savory-sweet tomato jam with shallots, garlic, warm spices, and sesame seeds.

Ingredients
- 2 tbsp olive oil
- 2 medium shallots, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1/4 cup red wine or red wine vinegar
- 2 (28-oz) cans whole peeled tomatoes, crushed by hand
- 1/3 cup granulated sugar
- 1 1/2 tsp kosher salt
- 1 tsp sesame seeds
- 1/2 tsp ground cinnamon
- 1/4 tsp ground black pepper
- 1/4 tsp red pepper flakes
Instructions
- Heat the olive oil in a medium pot over medium heat for 2 minutes until shimmering.
- Add the shallots and garlic and cook for 8-10 minutes, stirring often, until soft, golden, and jammy.
- Stir in the tomato paste, cinnamon, black pepper, and red pepper flakes and cook for 1 minute until fragrant.
- Pour in the red wine or vinegar and scrape up any browned bits, simmering for 1-2 minutes until mostly reduced.
- Add the crushed tomatoes, sugar, salt, and sesame seeds, then stir to combine.
- Simmer uncovered over medium-low heat for 20-25 minutes, stirring occasionally, until thick, glossy, and jam-like.
- Remove from the heat and cool for 10 minutes before serving or storing; it should mound on a spoon.
