Crispy chicken breasts topped with Caesar salad and served on brioche buns.

Ingredients

  • 3 to 4 boneless, skinless chicken breasts
  • 4 eggs
  • 1 1/2 cups panko breadcrumbs
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 heads romaine lettuce, chopped
  • 1/3 cup mayonnaise
  • 1 cup finely grated parmesan cheese
  • 2 tbsp lemon juice
  • 2 tbsp Worcestershire sauce
  • 1 garlic clove, minced
  • 4 brioche burger buns
  • 2 tbsp neutral oil, for frying

Instructions

  1. Slice the chicken breasts in half horizontally if thick, then season with salt and pepper.
  2. Set up three bowls: flour mixed with baking powder and cayenne, beaten eggs, and panko breadcrumbs.
  3. Dredge each chicken piece in flour, dip in egg, then coat in panko, pressing to help it stick.
  4. Heat 2 tablespoons oil in a skillet over medium heat for 4 to 5 minutes, until shimmering.
  5. Fry the chicken 4 to 5 minutes per side, until deeply golden and the center reaches 165°F.
  6. Whisk mayonnaise, parmesan, lemon juice, Worcestershire sauce, garlic, salt, and pepper into a thick Caesar dressing.
  7. Toss romaine with enough dressing to lightly coat, about 2 to 3 minutes before serving.
  8. Toast the brioche buns for 1 to 2 minutes, then build each burger with chicken and Caesar salad.
