Ingredients
- 3 to 4 boneless, skinless chicken breasts
- 4 eggs
- 1 1/2 cups panko breadcrumbs
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1 tbsp cayenne pepper
- 1 tsp salt
- 1 tsp black pepper
- 2 heads romaine lettuce, chopped
- 1/3 cup mayonnaise
- 1 cup finely grated parmesan cheese
- 2 tbsp lemon juice
- 2 tbsp Worcestershire sauce
- 1 garlic clove, minced
- 4 brioche burger buns
- 2 tbsp neutral oil, for frying
Instructions
- Slice the chicken breasts in half horizontally if thick, then season with salt and pepper.
- Set up three bowls: flour mixed with baking powder and cayenne, beaten eggs, and panko breadcrumbs.
- Dredge each chicken piece in flour, dip in egg, then coat in panko, pressing to help it stick.
- Heat 2 tablespoons oil in a skillet over medium heat for 4 to 5 minutes, until shimmering.
- Fry the chicken 4 to 5 minutes per side, until deeply golden and the center reaches 165°F.
- Whisk mayonnaise, parmesan, lemon juice, Worcestershire sauce, garlic, salt, and pepper into a thick Caesar dressing.
- Toss romaine with enough dressing to lightly coat, about 2 to 3 minutes before serving.
- Toast the brioche buns for 1 to 2 minutes, then build each burger with chicken and Caesar salad.
