Ingredients
- 6 large green bell peppers, tops removed and seeds cleaned
- 1 lb ground beef
- 1 packet taco rice mix
- 1/2 cup onion, diced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 tsp taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar or mexican blend cheese
- 2 tbsp fresh parsley or cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange the hollowed bell peppers upright in a baking dish.
- Heat a skillet over medium heat and brown the ground beef with the diced onion until fully cooked, 6–8 minutes.
- Drain any excess grease from the skillet.
- Stir in the taco rice mix, diced tomatoes with chilies, corn, taco seasoning, and water.
- Simmer the mixture for 5 minutes until the liquid is slightly absorbed and the rice is partially cooked.
- Spoon the beef and rice mixture evenly into the cavity of each bell pepper.
- Top each stuffed pepper with the shredded cheese.
- Bake for 25–30 minutes until the peppers are tender and the cheese is melted and bubbly.
- Garnish with fresh parsley or cilantro before serving.
