Ingredients

  • 1.25 lb scallops, side muscle removed and patted dry
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 0.25 cup broth
  • 2 tbsp lemon juice
  • 0.25 cup fresh parsley, chopped
  • 0.25 tsp salt
  • 0.25 tsp ground black pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Place scallops in a single layer, ensuring not to crowd the pan, and season with salt and pepper.
  3. Sear for 2–3 minutes on one side until a golden crust forms.
  4. Flip and sear for another 2 minutes until scallops are opaque, then remove from skillet and set aside.
  5. Melt 2 tablespoons of butter in the same skillet, scraping up any browned bits.
  6. Add garlic and cook for 1 minute until fragrant.
  7. Pour in broth and simmer for 2 minutes until liquid is reduced by half.
  8. Stir in the remaining butter and lemon juice, then remove from heat.
  9. Return scallops to the pan, toss gently to coat, and serve immediately garnished with parsley.
