Ingredients
- 1.25 lb scallops, side muscle removed and patted dry
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 0.25 cup broth
- 2 tbsp lemon juice
- 0.25 cup fresh parsley, chopped
- 0.25 tsp salt
- 0.25 tsp ground black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Place scallops in a single layer, ensuring not to crowd the pan, and season with salt and pepper.
- Sear for 2–3 minutes on one side until a golden crust forms.
- Flip and sear for another 2 minutes until scallops are opaque, then remove from skillet and set aside.
- Melt 2 tablespoons of butter in the same skillet, scraping up any browned bits.
- Add garlic and cook for 1 minute until fragrant.
- Pour in broth and simmer for 2 minutes until liquid is reduced by half.
- Stir in the remaining butter and lemon juice, then remove from heat.
- Return scallops to the pan, toss gently to coat, and serve immediately garnished with parsley.
