Ingredients
- 340g (12 oz) egg noodles
- 2 cup cooked chicken, cubed
- 2 cup frozen mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup evaporated milk
- 1 tbsp ranch seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup fried onions
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper (adjust to taste)
Instructions
- Boil the egg noodles in salted water for 8-10 minutes or until tender, then drain and set aside.
- Whisk the cream of chicken soup, evaporated milk, and ranch seasoning in a large pot over medium heat until smooth, about 3-4 minutes.
- Stir in the cooked chicken and frozen vegetables, cooking for 5 minutes until heated through.
- Add the cooked noodles and shredded cheddar cheese to the pot, stirring for 2-3 minutes until the cheese is melted and the sauce is creamy.
- Season with salt and black pepper to taste, then top with fried onions before serving.
