Ingredients
- 8 oz cavatappi pasta
- 2 pints cherry tomatoes
- 8 oz feta cheese block
- 0.5 cup extra virgin olive oil
- 2 cloves garlic, minced
- 0.25 cup fresh basil, chopped
- 0.25 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat the oven to 400°F (204°C).
- Place cherry tomatoes in an oven-safe baking dish and drizzle with olive oil, salt, and pepper, tossing to coat.
- Place the feta block in the center of the dish, coating it lightly in the oil, and bake for 35 minutes until tomatoes burst and cheese is soft.
- Cook the pasta in salted boiling water according to package directions until al dente, then drain, reserving 0.5 cup of pasta water.
- Stir the minced garlic and chopped basil into the baked tomato and feta mixture, mashing the cheese to create a sauce.
- Add the cooked pasta to the baking dish, tossing thoroughly to coat, adding reserved pasta water if needed for consistency.
- Garnish with extra fresh basil and serve warm.
