One-Pot Miso Salmon Stew by Tiffjonesss

Quick, healthy salmon stew with napa cabbage, mushrooms, and a savory miso broth.

Ingredients

  • 8 oz salmon fillet, cut into 2 portions
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups napa cabbage, chopped
  • 2 cups mushrooms, sliced
  • 2 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake or water
  • 2 cups stock of choice
  • 1 tsp neutral oil, optional

Instructions

  1. Season the salmon with salt and black pepper, then set aside for 2 minutes.
  2. Add the napa cabbage and mushrooms to a pot over medium heat, about 1 minute to layer them in.
  3. Mix the miso paste, soy sauce, mirin, and sake or water in a small bowl until smooth, about 30 seconds.
  4. Drizzle the sauce over the vegetables, nestle in the salmon, and pour in the stock.
  5. Cover and simmer over medium-low heat for 15 minutes, until the salmon is opaque and flakes easily and the cabbage is tender.
  6. Serve hot with the broth spooned over the top.
