One-Pot Miso Salmon Stew by Tiffjonesss

Quick, healthy salmon stew with napa cabbage, mushrooms, and a savory miso broth.

Ingredients
- 8 oz salmon fillet, cut into 2 portions
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups napa cabbage, chopped
- 2 cups mushrooms, sliced
- 2 tbsp miso paste
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake or water
- 2 cups stock of choice
- 1 tsp neutral oil, optional
Instructions
- Season the salmon with salt and black pepper, then set aside for 2 minutes.
- Add the napa cabbage and mushrooms to a pot over medium heat, about 1 minute to layer them in.
- Mix the miso paste, soy sauce, mirin, and sake or water in a small bowl until smooth, about 30 seconds.
- Drizzle the sauce over the vegetables, nestle in the salmon, and pour in the stock.
- Cover and simmer over medium-low heat for 15 minutes, until the salmon is opaque and flakes easily and the cabbage is tender.
- Serve hot with the broth spooned over the top.
