Pan-seared New York strip steak basted in garlic-thyme butter, served alongside crispy golden french fries.

Ingredients
- 1 new york strip steak (approx. 300g)
- 250g russet potatoes, cut into thin strips
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, smashed
- 3 sprigs fresh thyme
- 1 tsp kosher salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
- 500ml neutral oil for frying
Instructions
- Pat the steak dry with paper towels and season generously with kosher salt and black pepper on all sides
- Heat the neutral oil in a deep pot to 175°C (350°F) and fry the potato strips for 5-7 minutes until golden and crisp; drain on paper towels and season with salt.
- Heat olive oil in a cast-iron skillet over high heat until smoking slightly.
- Sear the steak for 3-4 minutes per side until a deep brown crust forms.
- Reduce heat to medium, add butter, garlic, and thyme to the pan
- Baste the steak continuously with the foaming butter for 2 minutes until it reaches desired doneness.
- Remove steak from the pan and let it rest for at least 5-8 minutes before slicing against the grain.
