Pan-seared New York strip steak basted in garlic-thyme butter, served alongside crispy golden french fries.

Ingredients

  • 1 new york strip steak (approx. 300g)
  • 250g russet potatoes, cut into thin strips
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, smashed
  • 3 sprigs fresh thyme
  • 1 tsp kosher salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 500ml neutral oil for frying

Instructions

  1. Pat the steak dry with paper towels and season generously with kosher salt and black pepper on all sides
  2. Heat the neutral oil in a deep pot to 175°C (350°F) and fry the potato strips for 5-7 minutes until golden and crisp; drain on paper towels and season with salt.
  3. Heat olive oil in a cast-iron skillet over high heat until smoking slightly.
  4. Sear the steak for 3-4 minutes per side until a deep brown crust forms.
  5. Reduce heat to medium, add butter, garlic, and thyme to the pan
  6. Baste the steak continuously with the foaming butter for 2 minutes until it reaches desired doneness.
  7. Remove steak from the pan and let it rest for at least 5-8 minutes before slicing against the grain.
