Pan-Seared Steak With Garlic Herb Butter by Thusmokingvip

Ingredients
- 2 ribeye or strip steaks (approx. 1 inch thick)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp neutral oil (grapeseed or canola)
- 3 tbsp unsalted butter
- 3 cloves garlic, smashed
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
Instructions
- Pat steaks dry with paper towels and season generously on all sides with salt and pepper.
- Heat a cast-iron skillet over high heat until smoking slightly, then add the oil.
- Place steaks in the pan and sear for 3-4 minutes per side until a deep brown crust forms.
- Reduce heat to medium, add butter, garlic, thyme, and rosemary to the pan.
- Baste the steaks continuously with the foaming herb butter for 2-3 minutes until internal temperature reaches 130°F for medium-rare.
- Remove steaks from the pan and let rest on a cutting board for 5-8 minutes before slicing.
