Ingredients

  • 2 ribeye or strip steaks (approx. 1 inch thick)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp neutral oil (grapeseed or canola)
  • 3 tbsp unsalted butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary

Instructions

  1. Pat steaks dry with paper towels and season generously on all sides with salt and pepper.
  2. Heat a cast-iron skillet over high heat until smoking slightly, then add the oil.
  3. Place steaks in the pan and sear for 3-4 minutes per side until a deep brown crust forms.
  4. Reduce heat to medium, add butter, garlic, thyme, and rosemary to the pan.
  5. Baste the steaks continuously with the foaming herb butter for 2-3 minutes until internal temperature reaches 130°F for medium-rare.
  6. Remove steaks from the pan and let rest on a cutting board for 5-8 minutes before slicing.
