Cajun Shrimp and Sausage Dirty Rice by Thusmokingvip

Ingredients
- 450g (1 lb) large shrimp, peeled and deveined
- 350g (12 oz) andouille sausage, sliced into rounds
- 2 cup long-grain white rice, cooked
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 2 tbsp cajun seasoning
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and brown the sausage slices for 5-6 minutes until crisp.
- Remove sausage from the skillet and set aside, then add the remaining oil and the shrimp to the same pan, cooking for 2-3 minutes until pink and opaque.
- Remove shrimp from the pan and add the diced onion, bell pepper, and celery, sautéing for 5-7 minutes until softened.
- Stir in the minced garlic and Cajun seasoning, cooking for 1 minute until fragrant.
- Add the cooked rice and chicken broth to the skillet, scraping up any browned bits from the bottom, and cook for 3-4 minutes until heated through.
- Return the sausage and shrimp to the skillet, toss everything to combine, and garnish with fresh parsley before serving.
