High Protein Tofu Mince Rice Bowl by Thrivingonplants

Crumbled baked tofu tossed in a savory five-spice sauce, served over rice with greens.

Ingredients

  • 1 block (450g) extra firm tofu
  • 1 tbsp avocado oil (or oil spray), to coat tofu
  • 2 tbsp light soy sauce
  • 3 tsp dark soy sauce
  • 1 tbsp brown sugar
  • 1/8 tsp ground black pepper
  • 1/4 tsp Chinese five spice
  • 1/2 cup water
  • 2 tsp cornstarch
  • 1 tsp fresh ginger, grated
  • 1 tsp garlic, minced
  • Cooked rice, to serve
  • Greens of choice, to serve (e.g. bok choy, edamame, or cucumber)

Instructions

  1. Preheat oven to 180°C fan-forced. Line a baking tray and set aside.
  2. Drain tofu and press out any excess liquid. Using clean hands, crumble into a mince-like texture.
  3. Spread crumbled tofu onto the lined tray, drizzle or spray with oil, and toss to coat. Spread into a single even layer.
  4. Bake for 20–25 minutes until very lightly golden, tossing at the halfway mark. Do not over-bake or the tofu will become too hard.
  5. While tofu bakes, whisk together light soy sauce, dark soy sauce, brown sugar, black pepper, five spice, water, and cornstarch in a bowl until fully combined.
  6. Heat a lightly oiled frypan over medium heat. Add ginger and garlic and fry for 1 minute until fragrant and lightly golden.
  7. Re-whisk the sauce to redistribute the cornstarch, then pour into the pan.
  8. Add baked tofu mince and cook on medium-high for 2–3 minutes, stirring, until sauce thickens and coats the tofu. Add a splash of water if you prefer a saucier consistency.
  9. Spoon tofu mince over bowls of cooked rice, add greens, garnish as desired, and serve immediately.
